Pupusas Familia began where so many great food stories do — at the Boulder County Farmers Market, where Franklin Escobar first introduced Colorado to the vibrant flavors of El Salvador. Inspired by the community’s warm response, Franklin launched a family business dedicated to sharing the food, culture, and traditions of home.
What started as a humble market stall has grown into a Commissary Kitchen, a catering operation, and a frozen pupusas line — bringing authentic Salvadoran cuisine to kitchens, offices, and celebrations across the Front Range.
Every dish we serve carries that original intention: to connect people with the genuine flavors of Central America and create a gathering place — however temporary — that feels like family.

Our Commissary Kitchen is open weekdays: Monday thru Friday from 9:00pm - 2:00pm. We are located on Pearl Street, just East of 49th St. This is the same menu for our Food Truck.
We are proud to introduce our eight varieties of frozen pupusas. They are made with fresh, quality ingredients and ready to heat up.
The pupusa is El Salvador’s most beloved dish and naturally gluten-free — a thick, handmade corn tortilla stuffed with savory fillings and served with curtido (fermented cabbage slaw) and red salsa. It’s comfort food with centuries of tradition behind every bite. We have dairy-free options and vegan-friendly options.
We serve hot pupusas at five of our Farmers Market locations or at our Commissary Kitchen for lunch on weekdays. We also have a food truck and catering services for small family gathering up to large office events and everything in-between.
